Pea & Chilli Soup

This is an easy and delicious starter and serves 6 people.

Ingredients:

450g frozen peas                                             50g butter
1 medium onion, diced                                     2 garlic cloves, crushed
2 red chillies, finely chopped                            850ml chicken stock
salt, pepper and a pinch of sugar

Method:

Melt butter on a gentle heat and add onion, garlic and chillies.  Season with salt and pepper and sweat for 3-4 minutes.  Add the frozen peas and cover with the hot stock.  Bring to the boil and simmer for 5-8 minutes.  Liquidise, check the seasoning and add a pinch of sugar.

You can vary the number of chillies according to taste.
